Banana Orange Cake.



This cake was made with love a product of 2020 lockdown. It's being a crazy year so far but I decided I'll stay positive, strong and productive as we wait to see what will come out of year 2020. I'm so happy to share this delicious orange flavour banana cake here. Let me know if you try this recipe, I'm sure you'll love it just like my family and I did x

• In making this recipe you have to make sure everything you need is set and ready to go.
• Minimal mixing is required to get a good result.
• Try NOT to hip the flour in the measuring cup, scooping in the flour into the cup with a spoon and level out the top.
• You can use any other oil you prefer but not flavoured oil as this will take away from the take and flavour of the cake after baking.

RECIPE.

2+1/2 cups self raising flour. 
1/4 cup cornflour. 
1 tsp baking powder. 
1 tsp baking soda. 
1/4 tsp salt.
1 cup caster sugar. 
4 very ripe bananas.
3 eggs.
1/2 cup melted butter + 1/2 cup sunflower oil
1 tsp vanilla extract. 
1/2 cup orange juice (squeeze a fresh orange)
1 tbsp orange zest.

Glaze: 2 tbsp icing sugar. 
 1 - 1 1/2 tbsp orange juice.


INSTRUCTIONS.

Preheat oven to 160 degrees.

1. Add bananas in a bowl, mash properly and set aside.

2. Add eggs and sugar in a bowl and whisk using a hand mixer or stand mixer for 1 minute. 

3. Mix in melted butter, oil, vanilla extract, mashed banana, orange juice and orange zest till combined. (DO NOT OVER MIX)

4. Sift flour, cornflour, salt, baking powder and baking soda into a bowl.

5. Add half of the dry ingredients into the batter and mix in using a spatula. Add the rest of the dry ingredients, use the spatula to fold in and scrape down the sides of the bowl.

6. Finish with the mixer just until everything is well combined and batter is smooth (AVOID OVER MIXING)

7. Pour batter into 2 lined baking loaf tins and bake for 50-55 minutes or until a skewer stick comes out clean. Allow to cool for 15-20 minutes and drizzle with the glaze mixture. Enjoy.
