Cabbage And Pink Salmon Sauce

This easy delicious Sauce is one thing you should try cooking, it is so delicious, full of flavour and ideal for when you are just tired of having Tomato Stew/meat/chicken. I made it with Grilled Chicken for Christmas and just thought to cook it with Sea food which turned out amazing. For this recipe, meal prep is very important. Vegetables have to be chopped, ready to go into the pot as soon as its time as the sauce does not require long cooking time if not the veggies will get overly soft and soggy, you want them crunchy and delicious with the vitamins still intact.

Sauce served with White Rice and Plantain Chops


Ingredients For Cabbage Sauce

1/2 of 1 Cabbage
3 Large Carrots
1/2 of each (green, red and yellow bell peppers)
2 Scotch bonnets
King Prawns
5 Spring Onions
1 Cup water
2 Knorr cubes
1tbs + 1/2tsp Corn flour
1/2 tsp Curry powder
1/2 tsp Thyme
1/4 cup oil (olive oil, sunflower oil, coconut oil anyone)

For Grilled Salmon

7 Pieces Pink Salmon Fish Fillet
2 tbs Sunflower oil
1/2 tsp Foodace Grill Mix Spice
1/4 tsp salt
1 cube Knorr
1 Medium sized Onion

Instructions

Season fish with all the ingredients carefully rubbing it in to coat properly, cover with cling film and refrigerate overnight. Turn on the oven to Gas Mark 8, line an oven tray with foil, lay in the fish and grill for 15-20 minutes (be careful not to over grill and have a dry rubbery fish) until fish is grilled the way you prefer it.

While the fish is in the oven, place a sauce pan with oil on a low heat, add spring onions cook for some seconds do not brown it, add prawns cook for 2 minutes, add all the chopped vegetables + the seasoning cook for 1 minute then mix corn flour in water and pour into the pan, cover the pan and leave to cook for 2 minutes. Add the grilled fish and carefully stir, taste for salt and adjust as required. Turn off the fire and leave the pan open to avoid over cooking the veggies. Serve with boiled rice and fried plantain chops. I had it with fried yam and plantain the next day. NB: you can add more water if needed or if you prefer the sauce with more juice.

Freshly Cooked Sea Food Okra Soup

I made this very delicious fresh Okra soup with Salmon fish, prawns, pack of mixed sea food, fresh spinach, okra, sweet long pepper, a tablespoon of red oil, crayfish, scotch bonnet, knorr seasoning cube and salt to taste. This was quick and easy to cook because I prepped everything the day before, packed them in small containers and stored in the fridge. My kids love to eat our native foods, pounded yam and Egusi soup/ Okra soup is their all time favourite. I love the fact that they are enjoying good food instead of asking for chips and nuggets all the time. I actually achieved cutting out fast food cravings by cooking different meals and stocking the fridge which helped me serve them varieties and then fast food became a treat for them during most weekends if they remember to ask...goals. You can have a bowl of this freshness alone or pair with pounded yam (poundo) garri, oatmeal, agidi, cornmeal, boiled yam or white rice.
 EASY PUFF PASTRY RECIPE This recipe came about after I tried the usual folding method and found it tedious. I needed something quick, easy and less stressful. All you need is 4 ingredients to make a flaky delicious puff pastry for sausage rolls or pies. The most important tip is to make sure your ingredients are very cold, it helps a lot with this method.                                                                     INGREDIENTS. 250g Unsalted Butter (cut butter into small chunks, spread out on a lined baking tray and freeze overnight) 2 1/2 Cups Plain flour Pinch of salt 1/2 cup chilled milk 1 egg                                                             INSTRUCTIONS 1. Add flour, butter and salt in a food processor and whizz till the butter break up into tiny little pieces you almost can't see it easily. 2. Get a deep bowl (chill the bowl in the fridge for 30 minutes before. It's optional but helps keep the pastry cold) tip the flour and butter i
