Hey! I have something yummy for you to try this weekend. It is absolutely delicious, my family loved it. This is my new twist to having fried Plantain and sweet Potatoes, my way of keeping them moist and soft instead of dry that it almost chokes you while you're eating. With this method you do not necessarily need to have Pap, Custard, Porridge on the side. Sweet Potatoes and Plantain Ingredients 2 Big Red Sweet Potatoes 2 Big ripe Plantains Half of 1 Green and Red bell peppers (cut in strips) 2 Carrots 3/4 cup Coconut oil A handful of King Prawns 2 Big Tomatoes (chopped) 3 Spring Onions (chopped) 1 Garlic clove (grated) 1 Scotch bonnet 1 Tsp Curry powder 1 Tsp Ginger powder 1 Tsp salt Seasoning cubes Instructions Cut the potatoes, wash and set aside in a seive to drain.
