Noodles With Chicken And Veggies Stir Fry


Ingredients

2 Packs of Indomie noodles ( boiled for 1-2 minutes, run under cold water to stop the cooking process and to keep it firm and not soggy)
1 Handful of Mixed Frozen Vegetables ( carrots, peas, sweetcorn)
Half of 1 Sweet long pepper (finely chopped)
Half of 1 Green Bell Peppers (finely chopped)
Cooked Chicken (shredded, add as much as you want)
1/4 Cup Coconut oil (the flavour is amazing)
1 Medium sized Onion (finely chopped)
1 Tsp Curry powder
1/2 Tsp Thyme
1 Garlic clove (grated)
Fresh Ginger
1 Scotch bonnet
Seasoning cube
Salt to taste

Instructions

Heat up a Wok on medium heat, add oil and onions fry for a bit till it softens, add garlic and ginger stir then add the vegetables, stir fry for 3-4 minutes then throw in the chicken keep stirring, make sure it is pipping hot, add all the other ingredients and the noodles, stir properly, taste for salt and seasoning cube, add more if required. You can use any cooked noodles of choice. Serve hot and enjoy!

Here is one of the most sought after Nigerian delicacy loved by all. It is one of my favourite local delicacies which I almost gave up trying to prepare because its difficult to find natural unrefined Red oil in the UK which gives the dish its peculiar taste...so rich and delicious.
