WELCOME 2018! HAPPY NEW YEAR!!!


Hey! Happy New Year everyone, welcome to 2018 a special year of favour, blessings, grace, positive energy, happiness, love and great achievements. Did anyone make any New Year Resolutions? I personally did not make any resolutions per say because as a human being I struggle just like anyone else would so I just take everyday as it comes while praying for grace and strength to keep doing the right thing no matter how bad things might get especially with situations you have absolutely no control over, you leave it to fate. Life is all about what you make of it no matter how little. I try to appreciate the littlest things in life while hoping for the bigger things to fall into place. CONTENTMENT is key to a happy life trust me I know that for sure, it is without a doubt the best way to go through your daily life. Looking at other peoples lifestyle and trying to "Keep Up with The Joneses" when you honestly know that you cant afford that lifestyle will only push you into doing things that will destroy you in one way or the other.

Social Media has made life even more challenging with people struggling to live a fake/false lifestyle just to appear bigger than their true image. This is a new year, try and be true to yourself, learn to celebrate your life and good health, cherish every happy moment and things that make you smile, live a realistic lifestyle, try not to impress anyone else but yourself first and take everyday as it comes. Try and have moments of reflection, stop and take stock of your milestone, be proud of yourself and never regret any mistakes because sometimes what we want is not necessarily good for us at that moment.

Make this year a positive one, try not to sweat the small stuff, if things are not going the way you planned, stop and take a step back, breath and start again. It is important to be patient and live a life of GRATITUDE, never stop believing in yourself. Work on yourself always, keep getting better with what you do and never stop learning to better yourself instead of competing or trying to outshine the next person. Have the courage to walk away from situations that do not add any positive value/growth to your  journey because everyone is special. Freshly Cooked Sea Food Okra Soup

I made this very delicious fresh Okra soup with Salmon fish, prawns, pack of mixed sea food, fresh spinach, okra, sweet long pepper, a tablespoon of red oil, crayfish, scotch bonnet, knorr seasoning cube and salt to taste. This was quick and easy to cook because I prepped everything the day before, packed them in small containers and stored in the fridge. My kids love to eat our native foods, pounded yam and Egusi soup/ Okra soup is their all time favourite. I love the fact that they are enjoying good food instead of asking for chips and nuggets all the time. I actually achieved cutting out fast food cravings by cooking different meals and stocking the fridge which helped me serve them varieties and then fast food became a treat for them during most weekends if they remember to ask...goals. You can have a bowl of this freshness alone or pair with pounded yam (poundo) garri, oatmeal, agidi, cornmeal, boiled yam or white rice.
 EASY PUFF PASTRY RECIPE This recipe came about after I tried the usual folding method and found it tedious. I needed something quick, easy and less stressful. All you need is 4 ingredients to make a flaky delicious puff pastry for sausage rolls or pies. The most important tip is to make sure your ingredients are very cold, it helps a lot with this method.                                                                     INGREDIENTS. 250g Unsalted Butter (cut butter into small chunks, spread out on a lined baking tray and freeze overnight) 2 1/2 Cups Plain flour Pinch of salt 1/2 cup chilled milk 1 egg                                                             INSTRUCTIONS 1.
