Hi! Today I'd like to talk about human skills, strengths and pace. Women generally have unbelievable strengths and great skills which sometimes come naturally or by observation. Natural skill is a natural ability that is inherited from family. It could be physical endowments, talent, gift of quality inherited from parents or grand parents. It is absolutely brilliant for one to have a good natural skill to help you through lives journey. As a mum I'm able to juggle a lot on a daily because I watched my mum and grand mum do same without feeling over worked. My granny (God bless her soul) was a very industrious and hardworking woman who carried a lot on her shoulders, did a lot of charity work and made sure everyone around her is happy.

She taught young women how to be domesticated and how one can find fulfillment in the little things of life. As a grandchild I spent a lot of my school holidays with her which exposed me to hard work, perseverance and contentment. I grew interest in cooking, baking and sewing at a very young age which really helped me during my college years and now that I have my own kids and home to run. I still have lots of food and pastry recipes I learnt from my granny and I've realised that some of the skills and strengths I have now started unfolding naturally as soon as I had my daughters and they are also learning from me.

Living in the UK opened my eyes to so many possibilities which has helped me acquire some skills that I apply into my daily routine and lifestyle. One of the things I love to do is cooking and baking, I love to try new things, create new recipes and add a new twist and tweak to already existing recipes which is so exciting. It makes me so happy to see my kids eating well, enjoying my meals and asking for more. I'm so happy they've started eating lots of vegetables, we pair foods like rice, spaghetti, macaroni etc with different types of vegetables like broccoli, cauliflower, sweetcorn, green beans, peas and carrots. Once, I took interest in making smoothies and they joined in and now we all love to have smoothies once in a while, they actually remind me to make one if I haven't done it for a while.

I treat them to fancy meals like homemade burgers, pizza, cakes, biscuits and cookies etc during the weekends, basically foods that we don't normally eat on week days because of time. One other thing I find most helpful is Meal Prepping, it helps for quick and easy cooking and saves a lot of kitchen time especially when you have to help the kids with homework/school projects or doing the laundry/ironing school uniforms. I've learnt so much about myself over the years and I'm grateful for my family and the strength I have even when I do not think I can cope especially as a full time mum, having to do almost the same thing everyday.

I'm blessed to have the skills I have, whenever I put my creative hat on magic happens...LOL. #kitchenmagic I'm rooting for all the mum's out there working hard, raising kids and building up a family. We should always remember to do things according to our abilities and pace taking it one day at a time, it doesn't matter how long it takes to get things done, the end result is all that matters. Stay focused on your own goals and aspirations and remember the kids are watching and learning. I hope this is a good read...I'll be sharing some snack recipes soon, feel free to share yours with me. Banana Orange Cake.

Freshly Cooked Sea Food Okra Soup

I made this very delicious fresh Okra soup with Salmon fish, prawns, pack of mixed sea food, fresh spinach, okra, sweet long pepper, a tablespoon of red oil, crayfish, scotch bonnet, knorr seasoning cube and salt to taste. This was quick and easy to cook because I prepped everything the day before, packed them in small containers and stored in the fridge. My kids love to eat our native foods, pounded yam and Egusi soup/ Okra soup is their all time favourite. I love the fact that they are enjoying good food instead of asking for chips and nuggets all the time. I actually achieved cutting out fast food cravings by cooking different meals and stocking the fridge which helped me serve them varieties and then fast food became a treat for them during most weekends if they remember to ask...goals. You can have a bowl of this freshness alone or pair with pounded yam (poundo) garri, oatmeal, agidi, cornmeal, boiled yam or white rice.
 EASY PUFF PASTRY RECIPE This recipe came about after I tried the usual folding method and found it tedious. I needed something quick, easy and less stressful. All you need is 4 ingredients to make a flaky delicious puff pastry for sausage rolls or pies. The most important tip is to make sure your ingredients are very cold, it helps a lot with this method.                                                                     INGREDIENTS. 250g Unsalted Butter (cut butter into small chunks, spread out on a lined baking tray and freeze overnight) 2 1/2 Cups Plain flour Pinch of salt 1/2 cup chilled milk 1 egg                                                             INSTRUCTIONS 1. Add flour, butter and salt in a food processor and whizz till the butter break up into tiny little pieces you almost can't see it easily. 2.
