SOME OF THE THINGS I ENJOY EATING

I love foods plated beautifully! This is what I love to do, a gift I cherish so much. The results show how passionate I am doing it because its fun, interesting and one of the things that make me happy. MINI HOMEMADE PIZZA TO GO/ KIDS SCHOOL SNACK IDEA

Mini Pizzas served with Carrots and Avocado. INGREDIENTS FOR PIZZA DOUGH 2+1/2 cups All purpose flour 1/2 cup warm water 1/2 cup warm milk (optional) 2 tbsp granulated sugar 2 tbsp sunflower oil 1 tsp quick rising yeast Pinch of salt DIRECTIONS In a deep dry bowl, add all the dry ingredients stir properly, add the oil then start adding the water/milk a little at a time while mixing (you can use your hand if you do not have a mixer) mix dough until everything is well combined and dough is smooth and stretchy. Spray some oil in a bowl place the dough in the bowl and spray with some oil. Cover with cling film and a tea towel and leave in a dark place to rise for 45-50 minutes (I normally leave it in the oven or inside a cupboard while I prepare the pizza sauce) INGREDIENTS FOR PIZZA SAUCE  2 tins chopped tomatoes 2 tbsp tomato puree Onions 1 tsp cornflour 1 tsp lemon juice Sunflower oil Basil Parsley DIRECTIONS Place a sauce pan on medium-high heat, add a little bit of

FLUFFY STRAWBERRY PANCAKE

Pancake served with fruits and a drizzle of maple syrup Another way I love to serve Pancakes INGREDIENTS 2 cups All purpose flour 450 ml full cream milk 1/2 cup granulated sugar 2 tsp baking powder A pinch of salt 1/2 tsp baking soda 2 whole eggs 1/2 tsp nutmeg (optional) 8-10 strawberries (chopped) 1/4 cup oil (I used sunflower oil) Butter for greasing the pan Fruits to serve Direction Get a large clean dry bowl, sift in all the dry ingredients and set aside. In a separate bowl, add all the wet ingredients and whisk, now make a well in the middle of the dry ingredients, add the wet ingredients and whisk well until well blended in but be careful not to over mix. Preheat pan on medium heat, grease pan with butter, scoop in the pancake batter, add the strawberry toppings (optional) cook for 2-3 minutes or until bubbles begin to form on the top then its time to flip. Cook the other side for the same amount of time and remove and place on paper towel. Serve hot with fruits

I Love Plantain! (Dodo)

My love for Plantain (dodo) is beyond my control, it is one food I can eat anytime of the day and the best part is being able to cook/make it in different ways. Plantain is so versatile that it can be eaten ripe or unripe, fried, boiled or even made into a snack (Plantain Chip/Kpekere) and even as a snack, its still very delicious when flavoured with salt, ginger, pepper or sugar, fried slightly ripe...yum. I'm sharing photos of some of my delicious plantain meals. Boiled Ripe Plantain served with Vegetable Egg Sauce Fried Ripe Plantain served with fried Eggs and sweet Potatoes. Freshly Cooked Sea Food Okra Soup

I made this very delicious fresh Okra soup with Salmon fish, prawns, pack of mixed sea food, fresh spinach, okra, sweet long pepper, a tablespoon of red oil, crayfish, scotch bonnet, knorr seasoning cube and salt to taste. This was quick and easy to cook because I prepped everything the day before, packed them in small containers and stored in the fridge. My kids love to eat our native foods, pounded yam and Egusi soup/ Okra soup is their all time favourite. I love the fact that they are enjoying good food instead of asking for chips and nuggets all the time. I actually achieved cutting out fast food cravings by cooking different meals and stocking the fridge which helped me serve them varieties and then fast food became a treat for them during most weekends if they remember to ask...goals. You can have a bowl of this freshness alone or pair with pounded yam (poundo) garri, oatmeal, agidi, cornmeal, boiled yam or white rice.

Noodles With Chicken And Veggies Stir Fry

Ingredients 2 Packs of Indomie noodles ( boiled for 1-2 minutes, run under cold water to stop the cooking process and to keep it firm and not soggy) 1 Handful of Mixed Frozen Vegetables ( carrots, peas, sweetcorn) Half of 1 Sweet long pepper (finely chopped) Half of 1 Green Bell Peppers (finely chopped) Cooked Chicken (shredded, add as much as you want) 1/4 Cup Coconut oil (the flavour is amazing) 1 Medium sized Onion (finely chopped) 1 Tsp Curry powder 1/2 Tsp Thyme 1 Garlic clove (grated) Fresh Ginger 1 Scotch bonnet Seasoning cube Salt to taste Instructions Heat up a Wok on medium heat, add oil and onions fry for a bit till it softens, add garlic and ginger stir then add the vegetables, stir fry for 3-4 minutes then throw in the chicken keep stirring, make sure it is pipping hot, add all the other ingredients and the noodles, stir properly, taste for salt and seasoning cube, add more if required. You can use any cooked noodles of choice. Serve hot and enjoy!

Sweet Potato And Plantain Delight

Hey! I have something yummy for you to try this weekend. It is absolutely delicious, my family loved it. This is my new twist to having fried Plantain and sweet Potatoes, my way of keeping them moist and soft instead of dry that it almost chokes you while you're eating. With this method you do not necessarily need to have Pap, Custard, Porridge on the side. Sweet Potatoes and Plantain Ingredients 2 Big Red Sweet Potatoes 2 Big ripe Plantains Half of 1 Green and Red bell peppers (cut in strips) 2 Carrots 3/4 cup Coconut oil A handful of King Prawns 2 Big Tomatoes (chopped) 3 Spring Onions (chopped) 1 Garlic clove (grated) 1 Scotch bonnet 1 Tsp Curry powder 1 Tsp Ginger powder 1 Tsp salt Seasoning cubes Instructions Cut the potatoes, wash and set aside in a seive to drain. Cut the Plantain in circles, heat up oil in a pan and fry till well browned, scoop out and spread on a kitchen towel to drain out the oil. Add the washed potatoes and fry as well, drain on

Beef Casserole My Style

Cooking is something I do with love because I enjoy creating new delicious recipes from the usual everyday meals. This recipe is very quick and simple with lots of flavour and deliciousness. Beef Casserole served with boiled Basmati Rice and Kidney Beans Beef Casserole ready to eat Ingredients 400g Beef Steak 2 big Carrots 2 Parsnips 5 Mushrooms 1+1/2 tbsp Corn flour A handful of Spinach 1 Garlic clove (grated to get all the flavour) 1 tsp Ginger powder 1 Scotch bonnet 1 Medium sized Onion 3 Spring Onions 1/4 Cup Sunflower oil 2 tbsp Tomato puree 1 tsp curry powder 1 Bay dried leaf seasoning cubes salt Instructions In a clean deep bowl, add the beef steak and season with cornflour, salt, curry and bay leaf, stir well cover with cling film and allow to sit for about 10-15 minutes while you prep the veggies. My Breakfast Inspiration

Breakfast is the most important meal of the day for me. It is very important to break that overnight fast by fueling your body well and creating that energy your body needs to run throughout the day. No matter how light or small the meal is it is important for your brain function and general well being. I personally do not function well if I haven't had breakfast, it triggers headaches and after a while my body starts to shake. Here are some of the foods I enjoy having in the morning, it keeps me full for longer and helps me avoid unnecessary snacking especially when I have only sweet treats around me. Hey! I'm sharing some of my meal ideas, food inspirations and some beautiful ways you can plate your delicious foods to look more appetizing and attractive to the eyes especially when you have visitors over or just as a treat for your loved ones. I'm a foodie who loves to eat delicious, well presented, gorgeous foods...it just makes me feel so good. Always remember to treat your body good, fuel your body well, do not wait until you're about to drop dead with hunger before you eat because it makes you eat more than your body needs at a time. Homemade Cheese Burger And Chicken Wings

Minced Meat  Ingredients for Burger Burger Bun 1/2 Cup Grated Cheese (about a handful) 1 Knorr seasoning cube 1/4 tsp Salt Grated white Onions 2 Cups Minced Meat Lettuce washed and dried 2 Large Tomatoes Mayonnaise Cheddar Cheese Oil for cooking the meat Barbecue Chicken Wings Recipe 12 Chicken Wings 1 tsp White Pepper 1 Scotch Bonnet 1 tsp Paprika 1 tsp Garlic Powder 2 tsp Salt Instructions In a bowl, add minced meat with seasoning cube, salt, grated onion, grated cheese and mix until properly incorporated, grab balls of meat and flatten in your palms and set in the refrigerator to rest for about 20-30 minutes. After the meat is rested place a pan on the stove heat up 2 tablespoons of oil, place the meat in the pan and cook flipping from side to side until meat is properly cooked through. Cabbage And Pink Salmon Sauce

This easy delicious Sauce is one thing you should try cooking, it is so delicious, full of flavour and ideal for when you are just tired of having Tomato Stew/meat/chicken. I made it with Grilled Chicken for Christmas and just thought to cook it with Sea food which turned out amazing. For this recipe, meal prep is very important. Vegetables have to be chopped, ready to go into the pot as soon as its time as the sauce does not require long cooking time if not the veggies will get overly soft and soggy, you want them crunchy and delicious with the vitamins still intact.
