I cant think of anyone who doesn't love a Sandwich, its one of my breakfast champions, quick and easy to put together. My daughter does swimming and other after school club activities and there hasn't been a time I needed a snack for her to take and she wouldn't ask for a sandwich. It is easier for me because i always have one or two things in the refrigerator which comes in handy especially during the morning rush.

These Are Some Of My Favourites


Croissants stuffed with Cheese, Tomatoes, Avocado and Lettuce. 
Mashed Avocado, Chicken and Lettuce on Toast

Soft and Squidgy Bead loaf (Agege bread for my naija people) with Omelette and a side of sweet Strawberries
Sesame Bagel stuffed with Ham, Cheese, Crunchy florette salad and Avocado

Bacon and Tomato Salad Sandwich with mini Carrots
You can always put together some of your favourite sandwich fillers,add Mayo or Greek yoghurt enjoy with the family as breakfast or packed lunch. I hope you try one of them!

Sweet Potato And Plantain Delight

Hey! I have something yummy for you to try this weekend. It is absolutely delicious, my family loved it. This is my new twist to having fried Plantain and sweet Potatoes, my way of keeping them moist and soft instead of dry that it almost chokes you while you're eating. With this method you do not necessarily need to have Pap, Custard, Porridge on the side. Sweet Potatoes and Plantain Ingredients 2 Big Red Sweet Potatoes 2 Big ripe Plantains Half of 1 Green and Red bell peppers (cut in strips) 2 Carrots 3/4 cup Coconut oil A handful of King Prawns 2 Big Tomatoes (chopped) 3 Spring Onions (chopped) 1 Garlic clove (grated) 1 Scotch bonnet 1 Tsp Curry powder 1 Tsp Ginger powder 1 Tsp salt Seasoning cubes Instructions Cut the potatoes, wash and set aside in a seive to drain. MINI HOMEMADE PIZZA TO GO/ KIDS SCHOOL SNACK IDEA

Mini Pizzas served with Carrots and Avocado. INGREDIENTS FOR PIZZA DOUGH 2+1/2 cups All purpose flour 1/2 cup warm water 1/2 cup warm milk (optional) 2 tbsp granulated sugar 2 tbsp sunflower oil 1 tsp quick rising yeast Pinch of salt DIRECTIONS In a deep dry bowl, add all the dry ingredients stir properly, add the oil then start adding the water/milk a little at a time while mixing (you can use your hand if you do not have a mixer) mix dough until everything is well combined and dough is smooth and stretchy. Spray some oil in a bowl place the dough in the bowl and spray with some oil.
