CHICKEN VEGGIES AND FRIES


No More Boring Meals!


I have a passion for cooking, creativity comes naturally to me and I try to apply it to my daily life even in the kitchen. Who says meals can only be served a particular way? Make it colourful, appetizing and delicious by trying new recipes and being adventurous with spices and fresh ingredients. To me, cooking is therapeutic, its something I enjoy doing ( I sure have lazy days) and its more fun when I have my Ear Phones on listening and enjoying my favourite songs while cooking...my mood do inspire my kitchen magic. Cooking is even more fun when you have prepared everything you need before hand which means spending less time in the kitchen especially when it requires a lot of  chopping, its best to have everything already chopped and set ready to go into the pot...meal prep is the best.

Instructions.

I made the chicken wings with mixed peppers, pak choi, garlic, ginger, onions, salt, seasoning cubes and coconut oil. First saute the chicken wings in a frying pan with 1 tbsp of coconut oil for 10 minutes with the ingredients above except the mixed peppers and pak choi before popping it into the oven to grill for further 15 minutes. After grilling, put it back into the pan you sauteed the chicken in, add 1-2 tbsp of ketchup (depending on the quantity of chicken you're cooking) pepper sauce, chopped mixed peppers + pak choi and stir for 1 minute (you want the veggies crunchy and sweet not soggy and sour) Serve with fried plantain (dodo) and yam fingers, enjoy. TIPS: Green pepper can be bitter when over cooked, you only need half of 1 green bell pepper just to get the flavour in the food.

Freshly Cooked Sea Food Okra Soup

I made this very delicious fresh Okra soup with Salmon fish, prawns, pack of mixed sea food, fresh spinach, okra, sweet long pepper, a tablespoon of red oil, crayfish, scotch bonnet, knorr seasoning cube and salt to taste. This was quick and easy to cook because I prepped everything the day before, packed them in small containers and stored in the fridge. My kids love to eat our native foods, pounded yam and Egusi soup/ Okra soup is their all time favourite. I love the fact that they are enjoying good food instead of asking for chips and nuggets all the time. I actually achieved cutting out fast food cravings by cooking different meals and stocking the fridge which helped me serve them varieties and then fast food became a treat for them during most weekends if they remember to ask...goals. You can have a bowl of this freshness alone or pair with pounded yam (poundo) garri, oatmeal, agidi, cornmeal, boiled yam or white rice.
 EASY PUFF PASTRY RECIPE This recipe came about after I tried the usual folding method and found it tedious. I needed something quick, easy and less stressful. All you need is 4 ingredients to make a flaky delicious puff pastry for sausage rolls or pies. The most important tip is to make sure your ingredients are very cold, it helps a lot with this method.                                                                     INGREDIENTS. 250g Unsalted Butter (cut butter into small chunks, spread out on a lined baking tray and freeze overnight) 2 1/2 Cups Plain flour Pinch of salt 1/2 cup chilled milk 1 egg                                                             INSTRUCTIONS 1.
