CHICKEN VEGGIES AND FRIES


No More Boring Meals!


I have a passion for cooking, creativity comes naturally to me and I try to apply it to my daily life even in the kitchen. Who says meals can only be served a particular way? Make it colourful, appetizing and delicious by trying new recipes and being adventurous with spices and fresh ingredients. To me, cooking is therapeutic, its something I enjoy doing ( I sure have lazy days) and its more fun when I have my Ear Phones on listening and enjoying my favourite songs while cooking...my mood do inspire my kitchen magic. Cooking is even more fun when you have prepared everything you need before hand which means spending less time in the kitchen especially when it requires a lot of  chopping, its best to have everything already chopped and set ready to go into the pot...meal prep is the best.

Instructions.

I made the chicken wings with mixed peppers, pak choi, garlic, ginger, onions, salt, seasoning cubes and coconut oil. First saute the chicken wings in a frying pan with 1 tbsp of coconut oil for 10 minutes with the ingredients above except the mixed peppers and pak choi before popping it into the oven to grill for further 15 minutes. After grilling, put it back into the pan you sauteed the chicken in, add 1-2 tbsp of ketchup (depending on the quantity of chicken you're cooking) pepper sauce, chopped mixed peppers + pak choi and stir for 1 minute (you want the veggies crunchy and sweet not soggy and sour) Serve with fried plantain (dodo) and yam fingers, enjoy. TIPS: Green pepper can be bitter when over cooked, you only need half of 1 green bell pepper just to get the flavour in the food.

MINI HOMEMADE PIZZA TO GO/ KIDS SCHOOL SNACK IDEA

Mini Pizzas served with Carrots and Avocado. INGREDIENTS FOR PIZZA DOUGH 2+1/2 cups All purpose flour 1/2 cup warm water 1/2 cup warm milk (optional) 2 tbsp granulated sugar 2 tbsp sunflower oil 1 tsp quick rising yeast Pinch of salt DIRECTIONS In a deep dry bowl, add all the dry ingredients stir properly, add the oil then start adding the water/milk a little at a time while mixing (you can use your hand if you do not have a mixer) mix dough until everything is well combined and dough is smooth and stretchy. Spray some oil in a bowl place the dough in the bowl and spray with some oil. I Love Plantain! (Dodo)

My love for Plantain (dodo) is beyond my control, it is one food I can eat anytime of the day and the best part is being able to cook/make it in different ways. Plantain is so versatile that it can be eaten ripe or unripe, fried, boiled or even made into a snack (Plantain Chip/Kpekere) and even as a snack, its still very delicious when flavoured with salt, ginger, pepper or sugar, fried slightly ripe...yum.
