FESTIVE INSPIRED SERIES 1- GOING LOCAL

I'd like to share some of my festive inspired eats which are basically unconventional with some people. The idea is to try something different from the usual Rice meals during Christmas, most people living in the city/abroad would appreciate these sort of food because they dont really get to enjoy them often. Its special and tastes more delicious when its from your mum's kitchen especially prepared locally with dried fish and cooked on firewood stove...yum. I hope you get to try one of them sometime, I love local foods and living in the UK will not raid on my parole...LOL
Basic Yam and Vegetable(Ji akwukwo) made with green/ugu /spinach vegetable and oil bean(ukpaka)

Boiled yam served with oil bean and spinach sauce (made this with red oil, crayfish, scotch bonnet, salt, knorr, ukpaka, tuna fish chunks and spinach)

Boiled ripe plantain served with cooked spinach and egg sauce (the egg sauce has bell peppers, scotch bonnet, salt and seasoning stock cubes)

Basic Yam Pottage made with spinach served with fried Plantains

Unripe Plantain/Yam Pottage (a combination of unripe plantain, 1 ripe plantain, yam cut in small cube and mackerel fish) I used scented leaves (nchuanwu) and a little bit of Ugu. The ripe plantain gives the food a little bit of sweetness which my kids love

Freshly Cooked Sea Food Okra Soup

I made this very delicious fresh Okra soup with Salmon fish, prawns, pack of mixed sea food, fresh spinach, okra, sweet long pepper, a tablespoon of red oil, crayfish, scotch bonnet, knorr seasoning cube and salt to taste. This was quick and easy to cook because I prepped everything the day before, packed them in small containers and stored in the fridge. My kids love to eat our native foods, pounded yam and Egusi soup/ Okra soup is their all time favourite. I love the fact that they are enjoying good food instead of asking for chips and nuggets all the time. I actually achieved cutting out fast food cravings by cooking different meals and stocking the fridge which helped me serve them varieties and then fast food became a treat for them during most weekends if they remember to ask...goals. You can have a bowl of this freshness alone or pair with pounded yam (poundo) garri, oatmeal, agidi, cornmeal, boiled yam or white rice.
 EASY PUFF PASTRY RECIPE This recipe came about after I tried the usual folding method and found it tedious. I needed something quick, easy and less stressful. All you need is 4 ingredients to make a flaky delicious puff pastry for sausage rolls or pies. The most important tip is to make sure your ingredients are very cold, it helps a lot with this method.                                                                     INGREDIENTS. 250g Unsalted Butter (cut butter into small chunks, spread out on a lined baking tray and freeze overnight) 2 1/2 Cups Plain flour Pinch of salt 1/2 cup chilled milk 1 egg                                                             INSTRUCTIONS 1.
